Almost any carbohydrates can be turned into starch, through wet milling process. For Sago and Tapioca, the piths or roots are respectively chopped and fractionated, then starches are extracted from its fibers.

Corn Starch is starch that is extracted from flat corn (Zea mays), which goes through a process of soaking (stepping), grinding (degerming), which then continues with the tapioca process as above, namely Wet Milling.
