Our Pho ("fuh") broth is stewed overnight for 8-12 hours from beef bone marrow and chicken bones combined. We use filet mignon beef rare slices (note: for TO GO orders, we leave the beef rare on top, so make sure broth is hot to pour over to cook to perfection.
