Kahia Gin bottles the essence that gave birth to a vibrant nation: an eagle perched atop a nopal cactus holding a serpent in its beak will be the sign from the gods to establish Tenochtitlán, the foundation of México. Nopal is an ancestral cactus used since our Aztec times as a valuable culinary ingredient, making it a key element in our Mexican culture and cuisine.
The prickly pear or nopal cactus has a characteristic flavor that can vary by species, maturation, terrain, and weather conditions where it's found. In summer, nopal cactus can flourish rapidly, creating a big surplus in production and when not sold or used, waste to our environment.
As nopal farmers, we faced this challenge and decided to do something that no one had ever done before, a dry gin with upcycled nopales.
