mariorossi pizza is contemporary Neapolitan pizza. Contemporary Neapolitan pizza, unlike the classic Neapolitan pizza, has a higher hydration and a longer leavening, which makes it very tasty and easily digestible.

Our dough is prepared with a blend of flours: we mix type 0 Petra Molino Quaglia flour with type 1 flour to make the mass softer and lighter, with approximately 70% hydration. The preparation technique is that of the "biga": we prepare a pre-dough by mixing water, yeast and flour, which remains at rest for a minimum of 18 and a maximum of 24 hours. We then resume the dough, adding the missing water and salt. The salt we use is real Riserva del Mare salt, Slow Food Presidium integral sea salt from Trapani.
