The baristas weigh every single dose of espresso on a coffee scale before pulling a shot. Coffee bean harvesting is still done manually. The beans grow in clusters of two; each cluster is called a ‘cherry.’ Next, the beans are dried and husked. In one method, the wet method, the beans are put in pulping machines to remove most of the husk.
