Chef Pascual Escobar grew up in traditional kitchens in his native Jalisco, Mexico. At age 10, he began creating his own recipes using locally sourced ingredients..
Upon his arrival in Los Angeles in 1993, Pascual began working in various restaurants, beginning as a soup cook, spent several years as a line cook before becoming Sous Chef at LA’s trendy French Marketplace. He first was exposed to vegetarian and vegan cooking while studying Mediterranean Cuisine and was soon preparing vegan fusion specials at Sage Vegan Bistro in Echo Park.
